Vegan Rice Bowl

Vegan Rice Bowl

Cook Time: 5-10 minutes

There’s the saying that “nothing tastes as good as healthy feels”, but in reality thats not entirely true. Melted cheese can taste quiiiiiite fabulous, but with a rapidly warming environment, we look for any excuses to cut animal products out of our diets and join in on the new wave of plant based diets. If you plan in advance and open your eyes to the opportunities surrounding you in your incredibly well stocked super market, its attainable.

Ingredients: Jalapeño pepper, hummus, oil (not canola or a spray!), minced garlic, brown rice, broccoli, spinach or any other dark greens.

  1. Prep your rice in a rice cooker or cook it on the stove.

  2. Allow olive oil, coconut oil, or vegan butter to heat up in a pan with chopped garlic

  3. Throw precooked brown rice, chopped broccoli, + any other dark greens the pan

  4. Allow to cook until the rice turns golden, the broccoli has darkened, and the greens have cooked down

  5. Remove from heat, and drown in as much hummus as you like (don’t hesitate to use any type of hummus, white bean, red pepper, or anything in between)

  6. Douse the bowl in as much Sriracha as you can take, because spicy is good for your heart!

  7. Finely chop a jalapeño pepper, depending on your preferred taste profile, and place on top.

Now get out there and enjoy your guilt free dinner, soldier!
